Dear Reader-. Now I had these two huge zucchinis and a bunch of folks over for dinner the other night, so we cut up half of one of those babies and fed an army the most yummy fried zucchini slices…. I stood right there and chatted away with my GOODe friend Lisa and shredded those puppies up… skin and all. I like to keep the skin on to up the fiber in my recipes. I got 12 cups out of those babies! I told you they were huge!

When I was in high school, Mom decided to plant a garden in the unused space in our side yard. We bought tomato plants, rosemary, and sage for the first half, and we designated the other side as a flower garden. Mom opted for brightly colored snapdragons, petunias, and geraniums, and we even installed a small drip irrigation system so all of the plants would survive when we went on vacation that summer.
